A whole pan of brownies? Bad idea. A reasonably sized piece of brownie? Good idea.
An entire pan of peach crisp? Bad idea. A single serving clean eating peach crisp? Very good idea!
I created this single serving recipe when I was craving something for dessert, but also needed to have another serving of fruit. I'm still following the food guidelines for the 21 Day Fix, so this recipe was created to fit with that program. I loved how this simple dessert turned out--I was able to satisfy a craving, without the temptation of an entire pan of dessert in the house. Additionally, I was able to use clean ingredients, so I could feel good about the food I was putting into my body.
1 peach
1/4 cup oats
1 teaspoon coconut oil
1 teaspoon honey
dash of cinnamon
1. Peel and slice peach into a small ramekin.
2. In a small bowl, combine the oats, coconut oil, honey and cinnamon.
3. Microwave for 15-20 seconds, until the coconut oil melts. Stir until oats are moistened.
4. Sprinkle the oat topping over the sliced peaches.
5. Microwave for 30 seconds.
Enjoy warm!
