You will need:
2 chicken breasts
2 slices of thick sliced ham
2 slices Monterrey Jack cheese
breadcrumbs
1. Slice each piece of chicken in half, but don't slice all the way through, to create a pocket.
2. Place a piece of ham in the pocket.
3. Place a piece of cheese on top of the ham.
4. Close the chicken with a toothpick.
5. Sprinkle the top of each chicken breast with breadcrumbs.
6. Bake at 350 for 30 minutes, until chicken is cooked all the way through.
Chicken Cordon Bleu is one of my favorites too! I cannot eat the bread crumbs, and I would have to have that sauce that goes over it. Like you, I only make it on special occassions but this looks like a good quickie version for all who can eat bread.

ReplyDeleteThis looks so yummy. I can't wait to try it. I'm a huge cordon bleu fan. I usually buy the frozen ones for a quick version for myself, but honestly its not so quick because they take an hour to cook. haha.
